Baking cakes empower me.  I love to take raw ingredients, measure and mix them just so, bake it to perfection and frost it like your freaking Picasso.    The results are a rewarding heavenly, delectableness goodness that makes you want to dance in your yoga pants.  That’s why, I found it funny when my mom recently asked me, “Why don’t you just use a box cake mix, it’s so much easier.”  I looked at her and replied, “Whhhhhaaaat?… where’s the fun in that? That’s like jumping to the end of a book without enjoying the whole journey”

Why do I bake? 

I love to do things that have a beginning and end to it.  And baking has just that.   I’ve always dabbled in the kitchen.  But for the past few years, my cooking skills have increased dramatically.   I think it has to do with being focused on the present-future and incorporating more patience in my life.  I use to want food to hurry up and cook because I had things to do.  Now, I respect food.  I co-create with food.  I understand that it needs to cook on its own terms.  It’s science, but to me, it’s mostly magic and I honor it.  If you are looking for a rewarding creative outlet and to boost the ole self-esteem, try baking something.

Benefits of Baking

Since I’ve been baking, my self-confidence has increased.  I used to be embarrassed to have friends eat my disasters.  Now, I wrap up goodie packages with happy notes and gladly share them with my friends. Here’s the skinny, we are all here on this planet to playfully imagine, create and share our talents with the rest of the world.   Challenge yourself to create something that you’ve never tried before.  What’s the worst that can happen?  Trust me, my friends gladly eat my epic baked fails.  But more, they run over when they hear I am baking something.  That makes me feel joyful and happy inside.  Now here’s the fatty, happiness is where all of the magic happens.  Being happy increases your frequency and allows other magic to flow to you.  So do the things you love… like, ummm bake a cake.  😉  xo.

Best Chocolate Cake Recipe – Ever!

For Cake

2 eggs

1 cup whole mile

1/2 cup vegetable oil

2 teaspoons vanilla extract

2 cups sugar

1-3/4 cups all purpose flour

3/4 cup cocoa powder, plus for dusting

1-1/2 teaspoons baking powder

1-1/2 teaspoons baking soda

1 teaspoon sea salt

1 cup boiling cup of coffee

Frosting

2 sticks butter (room temperature)

3 cups confectioners sugar

1 teaspoon salt

1 teaspoon vanilla extract

2 tablespoons whole milk

 

Directions:  

To make cake:

  1.  Preheat oven to 350 f degrees.  Butter and dust two 9 inch pan with cocoa powder, set aside.
  2. In a medium bowl, combine eggs, milk, vegetable oil and whisk to combine.
  3. In a large bowl or mixer bowl, combine sugar, flour, cocoa, baking powder, baking soda, and salt.  Stir to combine.
  4. In a steady stream, add the liquid ingredients and beat on medium speed for 2 minutes.  Add the boiling coffee and stir on low to combine.  (The batter will be thin). Pour into the prepared pans. Rap on the pans to release any air bubbles inside.
  5. Bake for 30-35 minutes, or until wooden toothpick inserted comes out clean.  Cool cakes for 10 minutes on a wire rack, then remove from pan and let cool on the wire rack.
  6. Cool completely before frosting.

To make frosting:

  1. In a large bowl or mixer bowl combine butter, confectioners sugar and salt.
  2. Beat on low speed until combined, about 2 minutes.  Scrape the sides of the bowl, increase speed to medium and beat till fluffy for 3 minutes.
  3. Stop mixer, add vanilla and milk.  Continue beating for 3 minutes on medium high, or 5 minutes with a handheld mixer. This is the best chocolate cake recipe ever!
